Comment

Soft Côtes de Bergerac are white wines with a low sugar concentration. The seeds are harvested ripe and slightly golden, without over-ripening, there is no need for noble rot for this type of wine. The harvest is carried out in a single pass during which the healthy and slightly concentrated berries are harvested. After pressing, the juice is settled to preserve all its finesse. The vinification is careful with the control of the temperature during the alcoholic fermentation, around 18°. This allows fruit aromas to be preserved as much as possible. They are appreciated in their youth but take on a remarkable size as they age.

Tasting

Bright wine, beautiful straw yellow color with a water green reflection. Floral aromas that mingle with fruit. Well balanced palate, return of peach aromas, hint of kiwi, good length. It can be enjoyed as an aperitif, with fish in sauce, with salads and with certain cheeses such as Bleu des Causses, or light pastries.
