Located in Cadaujac, in the heart of the prestigious appellation Pessac-Léognan, the Jaulian castle extends over 9.27 hectares of vines located on a sablo-gravelel terroir, resting on a basement of deep bass. Since 2004, David Castaing has been producing red wines exclusively, with an average of 55,000 bottles per year. The field retains a strong agricultural anchoring, combining viticulture floral production - notably that of thrush - as well as cows farming, testimony of a living and diverse rural heritage. Vinifications are based on modern equipment, including thermoregulation, for perfect control of fermentation. The breeding is then done in barrels, with two to three solicits, then ends in stainless steel tank in order to preserve the balance of wine without excess of wood.

Tasting

A wine with finesse, with a dark and intense dress. The nose seduced by its aromas of ripe black fruits, noted with subtle notes of spices and undergrowth, bringing a good depth. On the palate, the attack is flexible, the wine is distinguished by its balance, its freshness and its harmonious structure, offering a tasting as pleasant as it is elegant. He will go perfectly with character meats such as a tournedos, a grilled beef rib or a duck breast, and will also be able to accompany a tray of refined cheeses.
