Comment

The Dufour family has cultivated the vine and has raised wine at Château Simon since 1814. Bearer of a know-how transmitted from generation to generation and rich in a pioneering state of mind, Château Simon is expanding today on 33 hectares in Barsac-Sauternes, Graves and Bordeaux appellations. Sauternes wines therefore benefit from a unique microclimate, characterized by a temperature differential between the warm waters of the Garonne and the very cold waves of the Ciron. In autumn, the morning fogs catalyze the development of the Botrytis Cinerea, the noble rot, Saint-Graal des Vins de Sauternes. Manual harvest with 4 to 5 very meticulous successive sorts. Only the over-maturity clusters (botrytized) are selected, and are delicately pressed overnight. After a cold debt, the must be fermented in thermo-regulated stainless steel tanks. The best lots are selected and raised in oak barrels for 18 months.

Tasting

With a magnificent golden dress, this wine develops a very intense nose with a subtle bouquet of exotic fruits and citrus. The attack is round and fruity with a wide, rich and fresh evolution. The finish is greedy with spicy notes and an elegant slightly menthol.
