Comment

Predominantly clayey and loamy soils of the hills and valleys of Aude. Traditional vinification of a healthy crushed and destemmed harvest. Fermentation and maceration under controlled temperature. Maceration for about a week.

Tasting

The final blend incorporates a woody Merlot, giving the toasted notes. Brilliant raspberry color. The nose is expressive and fruity, with fruity notes (black plum and blackberry) as well as vanilla notes. Rounded, delicious and fruity palate. It evokes delicious aromas of red fruits and chocolate. Consume now at 18°C, with a country meal, a plate of charcuterie, grilled meats or a pasta dish. It can also be drunk cooler as an aperitif.
