Comment

This Jurançon benefits from the richness of the South-West terroir, a stony soil composed of a limestone underlay and moraine pebbles. Bottled in Monein, at the Confrérie du Jurançon, it is vinified by stopping the fermentation before transforming the sugar into alcohol. Manual harvest by successive sorting, the last 2 of which are intended to produce this sweet Jurançon. Draining, moderate pressing, static settling then fermentation at 18-20°C. Aging on fine lees for 12 months before bottling.

Tasting

Consumed very young, it will surprise you with its freshness and its intense aromatic expression such as a fruit salad where citrus fruits, fresh pineapple and exotic fruits intermingle. A harmonious and very subtle wine. By forgetting it for 2-3 years in your cellar, you will obtain a wine with a pretty yellow gold color, a nose evoking the sweetness of quince. Its mouth will enchant you with its aromatic expression, its freshness and its great finesse: we will find aromas of pineapple, quince, candied fruits, honey and eucalyptus. Very versatile, this wine will accompany all types of dishes. Going beyond its traditional pairing with foie gras, you can eat it with exotic cuisine, scallops with Jurançon sauce, roast chicken, raclette, sheep's cheese, Roquefort, as well as with a brioche dessert, a fruit tart or simply as an aperitif.
