VIOGNIER Grande Reserve comes from the best plots of three departments of the protected geographical indication country of OC: Hérault and the semi-coteaux of the Villafranchian terraces, for complexity and depth; The Gard and its clay-graveling soils, whose precocity brings power and wealth; Then finally the Aude, the later clay-limestone terroir which brings tension and freshness. So many terroirs in which Maison Castel observes, analyzes and tastes the berries of each plot almost quota to determine the best harvest date. In the cellars, the approach is just as rigorous. After a night harvest in order to preserve the grapes from oxidation, Maison Castel proceeds to film maceration in order to optimize the whole aromatic potential of this grape. Lightly wooded alcoholic fermentation and then farming on fine lees make it possible to express the complexity and aromatic richness of this grape.

Tasting

Light dress and its sustained gold reflections. Expressive nose with floral notes of white flowers with a hint of roasting. Ample and generous mouth with aromas of orchard's fruit such as pear and fishing. The finish is cool with slight smoked notes. Will perfectly accompany a salmon tartare, a carpaccio from Saint-Jacques and a goat cheese.
