Viognier Grande Réserve comes from the best plots of three departments of the Pays d’Oc Protected Geographical Indication: Hérault and the semi-slopes of the Villafranchian terraces, for complexity and depth; the Gard and its clay-gravelly soils, whose precocity brings power and richness; then finally Aude, a later clay-limestone terroir which brings tension and freshness. So many terroirs in which Maison Castel observes, analyzes and tastes the berries from each plot almost daily in order to determine the best harvest date. In the cellars, the approach is just as rigorous. After a night harvest in order to preserve the grapes from oxidation, Maison Castel carries out a skin maceration in order to optimize the full aromatic potential of this grape variety. The slightly woody alcoholic fermentation then aging on fine lees allows the complexity and aromatic richness of this grape variety to be expressed.

Tasting

Bright color and strong gold reflections. Expressive nose with floral notes of white flowers with a hint of roasting. Full and generous palate with aromas of orchard fruits such as pear and peach. The finish is fresh with slight smoky notes. Perfect with salmon tartare, scallop carpaccio and goat cheese.
