Slope vineyard south of Bergerac in the most prestigious commune of the Monbazillac appellation. Collection of candied and concentrated grapes caused by noble rot (Botrytis Cinerea), carried out between October and early November. Progressive pressing allowing the extraction of the best “free-run juice”. The settled must ferments at a controlled temperature around 20°C. When the residual alcohol-sugar balance has been obtained, fermentation is stopped by cold mating. This allows precise dosing of sulfur levels in wine. After 2 months in vat for clarification, the wine is drawn off then left in vat again until bottling.

Tasting

Intense nose characterized by botrytis, honey and cooked fruits. The wine is ample with great freshness given to it by controlled acidity. True to its nature, this beautiful sweet wine combines elegance, finesse and lightness.
