Domaine Fond Cyprès, nestled on the slopes of Corbières, is an ode to nature and the terroir. Founded in 2002 by Laetitia and Rodolphe Ourliac, it covers 18 hectares of vines cultivated in organic and biodynamic agriculture, and vinified naturally, without inputs or added yeasts. Grenache, Syrah, Carignan, Cinsault, Macabeu, Grenache Blanc and Roussanne are planted on blue marls (clay-limestone soils typical of the south of France), protected to the south by the hillside overlooked by forest, offering a cool respite in the evening after the scorching heat of the day. The plots are bordered by wild flowers and hedges preserving the freshness of the soil.

Tasting

Cyprès de Toi 2022 comes from a blend of Grenache, Syrah and Carignan from young vines. The grapes were destemmed and macerated for 3 weeks, before being pressed and aged in vats until the following spring. This organic red wine exudes intense aromas of ripe red and black fruits, garrigue and sweet spices. On the palate, the material is ample and silky, with fine and elegant tannins. The finish is long and persistent, with mineral and spicy notes.
